Ground Venison Meatloaf

Ingredients:

- 1 1/2 lbs ground venison
- 3/4 lb ground pork
- 1 chopped onion
- 1 tablespoon vegetable oil
- 1/2 cup fresh bread crumbs
- 1/3 cup milk
- 1 large egg
- 2 tablespoons of bourbon
- 3/4 teaspoon of rubbed sage
- 1 teaspoon of salt
- 1/2 teaspoon allspice
- 1/4 teaspoon pepper
- 1/3 cup plum jam
 

Preparation:

Preheat your oven to 350 degrees F and grease a loaf pan.

Heat the oil in a large skillet over low heat. Add the chopped onion and cook until it is softened. This should take approximately 8 to 10 minutes. Put the mixture into a large bowl and allow to cool. Add the ground venison, ground pork and the remaining ingredients and mix.

You can now take the mixture and put it into your pre-greased pan. Cover the loaf pan with alluminum foil after you have packed it down.

Bake time should be approximately 60 minutes although cook it until it is firm. Allow it to cool for 10 or 15 minutes in the pan and then drain the loaf.
